Regarding background sounds, I recommend adding it to accessibility shortcuts. You can’t change sounds or adjust their volume, but you can toggle it from the menu that appears when you triple click, or from control center.

Yes, within the Settings app you can select the sounds, and the volume of them when something else is playing a sound, and when it is not. Adding Background Sounds to the Accessibility shortcut is just handy for toggling the sounds without having to travel to the depths of Accessibility.
In general, the Accessibility shortcut menu is way underused. I have mine set up to toggle the sounds on/off, launch the Magnifier app, and to apply a colour filter that tints my display red for use outdoors at night. It's worth exploring!

Re: Background sounds, I noticed that each sound was downloading the first time I used it, so be sure to load them before going into airplane mode.
Those Birks are CUTE! I have three pairs but may be picking these up as a more "formal" option.

On my iPhone 13 running iOS 16.3.1 there is a volume slider on Background Sounds page for adjusting the volume of the selected background sound.
